# Expert Advice:

01 -
  • It comes together in 30 minutes flat, which means you can go from hungry to eating fresh grilled shrimp while the sun's still up.
  • There's something deeply satisfying about building your own bowl and tasting every ingredient at once—the brininess of olives, the cool crunch of cucumber, the tangy feta all in one bite.
  • It's naturally gluten-free and packed with protein, so you feel good eating it whether you're trying to be healthy or just genuinely hungry.
02 -
  • Don't marinate the shrimp for more than 20 minutes or the acid in the lemon juice will start to cook them, turning the texture mushy and defeating the whole purpose of grilling them.
  • If you don't have a grill, a grill pan on the stovetop works just as well—it gets just as hot and gives you nearly the same char without needing any special equipment.
03 -
  • Buy shrimp that smell like the ocean, not like ammonia, and cook them the same day you bring them home because fresh seafood waits for no one.
  • Make the dressing first and let it sit while you prep everything else—it'll taste better when the flavors have had a moment to meld together.
